Carved in front of your guests
Jon brings the whole leg, the stand and the knife to corporate events, product launches, weddings and residential property projects, and carves for the length of your event. What isn't eaten gets vacuum-sealed on the spot so it keeps.

Cut, weighed and sealed only once you've ordered
Nothing is sliced in advance to sit in a fridge. Every pack is carved off the leg, weighed and vacuum-sealed after your order comes in — which is the whole reason it tastes different from the supermarket version.

The shop is also a tapas bar. Barrels, stools, paella, and the same legs on the wall you're eating from. Open until 10pm Friday to Sunday.

Why hand-carved isn't just a story
A machine heats the fat
Machine-cut ham is usually deboned, cut into chunks, then sliced to a uniform thickness. A hand-carved slice keeps the fat-to-meat ratio the carver chose for that part of the leg.
The rind has to be cleaned
A whole leg carries mould across its surface after curing. Only carving by hand takes it off cleanly — which is why every leg here is carved and cut in Hong Kong rather than arriving pre-sliced.
The white specks are a good sign
Those white crystals in the slice are tyrosine, formed while the ham matures. They mean the pig was properly fed on a balanced diet — not, as customers sometimes assume, bone fragments.

Jon was born in Hong Kong to a Spanish family and studied jamón in Spain. 新假期 covered the shop in 2018 under the headline 「西班牙混血男讀火腿課程」, and put its prices at around 40% below the chains. The family has run the counter since 2013.
